This wine smells of warm, red clay soils or even a hot, terracotta pizza oven. It also smells of old, wooden spice racks and dried tomatoes. The taste is every bit as savory. It’s a bit stubborn and unyielding on the first few sips, but it softens up nicely – particularly with hearty red meat dishes. The tannins are elegant; it’s the acidity that really slices through the palate. I enjoyed a bottle at dinner about six weeks ago, and it was more forward from the start. Don’t be afraid to decant this one!
