Was It Obvious? Tasting Canned Wine Two Ways

Whatever format I receive a wine in, I always taste it in a tasting glass. After all, I mostly receive 750-ml bottles. (No, I don't take swigs from the bottle or employ a straw.) What was full-on astonishing to me was the difference in tasting this wine from my glass versus tasting it from the can. The perceptions were smashingly different. Going forward, I'll definitely be tasting wines packaged in cans both ways.

Bridge Lane NV Bubbles 11.9% $8.50 per 375 ml can (a half-bottle equivalent)
Whether from the can or a glass, this is an effusively aromatic bubbly. It's a blend of Riesling - from Bridge Lane's estate vineyard on Long Island - and Seyval Blanc and Muscat from the Finger Lakes. Not surprisingly, it's pretty exotic, smelling of peach nectar, passion fruit and guava. The sweetness is noticeable but fairly well balanced. The catch is the finish, which comes with a countering, aspirin-like bitterness. While the fun jumble of flavors scoot quickly off the palate, the bitterness lingers. It even turns the back palate dry and pasty. The result is a disjointedness between the pleasant sweetness, the medium acidity and the biting finish. Serve well-chilled and straight from the can for the optimal experience.
